Hearty Beef and Potato Loaf

4 C potatoes, thinly sliced (can peel or not, depending on how lazy you might feel)
1 T onion chopped
1 t. salt (I use Lawrys)
1/8 t. pepper
1 tsp parsley, flakes or chopped fresh (optional)
1 lb. hamburger (lean) or turkey
3/4 C evaporated milk
1/2 C cracker crumbs or rolled oats (old fashioned)
1/4 C ketchup
1/2 t. chili powder
1/4 C onion, finely chopped
1 1/2 t. Worcestershire sauce

1. Arrange potatoes, 1 T onion, salt, and parsley in a greased (or sprayed) 2-qt. baking dish.
2. Combine rest of ingredients and spread evenly over potatoes. (Spread on more ketchup, if desired.)
3. Bake 1 hour or until potatoes are fork tender.

Cozy dish for a winter's night.

Also--just wanted to say that I have new appreciation for what you are going through with your copd. I have been battling pneumonia complicated with a new diagnosis of asthma and it has not been a fun week. I am kind of partial to breathing too! Hugs to you...
